Ingredients
For the Mixed Veg Dry Dish :
- Oil or Ghee – 2 tbsp
- Cumin Seeds (Jeera) – 1 tsp
- Mixed Vegetables – 4 cups (carrots, beans, peas, cauliflower, potatoes, capsicum, or any choice of veggies, chopped)
- Onions – 1 large (finely chopped)
- Green Chilies – 2 (slit)
- Ginger-Garlic Paste – 1 tbsp
- Tomatoes – 1 medium (finely chopped)
- Ready-Made Sabji Masala – 2 tbsp
- Turmeric Powder – ½ tsp
- Red Chili Powder – ½ tsp (adjust to taste)
- Coriander Powder – 1 tsp
- Salt – To taste
- Water – ¼ cup (if needed to adjust consistency)
For Garnishing:
- Fresh Coriander Leaves – 2 tbsp (chopped)
- Lemon Wedges – 2 (optional)
Instructions
For Mixed Veg Dry Dish :
- Heat Oil & Temper Spices:
- Heat oil or ghee in a pan on medium heat.
- Add cumin seeds and let them splutter for a few seconds.
- Add chopped onions and sauté until golden brown (5-7 minutes).
- Add ginger-garlic paste and green chilies, sauté for another 2 minutes until fragrant.
- Cook the Masala Base:
- Add chopped tomatoes, cook until they soften and the oil starts separating (5 minutes).
- Add ready-made Sabji Masala, turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 2 minutes.
- Add Mixed Vegetables:
- Add the chopped mixed vegetables to the pan. Stir to coat them well with the masala.
- Cover and cook on medium heat for about 10-12 minutes until the vegetables are cooked but still firm. Stir occasionally to prevent burning. You can add ¼ cup of water if needed to adjust consistency and prevent sticking.
- Final Touches:
- Once the vegetables are cooked, let them dry out a little to make the dish dry and slightly crispy.
- Garnish with chopped fresh coriander leaves.
- Serve with lemon wedges on the side (optional) for a tangy twist.
