Instructions

For Mixed Veg Dry Dish :

  1. Heat Oil & Temper Spices:
  • Heat oil or ghee in a pan on medium heat.
  • Add cumin seeds and let them splutter for a few seconds.
  • Add chopped onions and sauté until golden brown (5-7 minutes).
  • Add ginger-garlic paste and green chilies, sauté for another 2 minutes until fragrant.
  1. Cook the Masala Base:
  • Add chopped tomatoes, cook until they soften and the oil starts separating (5 minutes).
  • Add ready-made Sabji Masala, turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 2 minutes.
  1. Add Mixed Vegetables:
  • Add the chopped mixed vegetables to the pan. Stir to coat them well with the masala.
  • Cover and cook on medium heat for about 10-12 minutes until the vegetables are cooked but still firm. Stir occasionally to prevent burning. You can add ¼ cup of water if needed to adjust consistency and prevent sticking.
  1. Final Touches:
  • Once the vegetables are cooked, let them dry out a little to make the dish dry and slightly crispy.
  • Garnish with chopped fresh coriander leaves.
  • Serve with lemon wedges on the side (optional) for a tangy twist.

Serving Suggestions

  • Serve hot with roti, paratha, naan, or jeera rice.
  • Pair with yogurt or a side salad for a complete meal.

Essential Tips

  • For extra flavor, add a pinch of asafoetida (hing) when tempering cumin seeds.
  • For a richer taste, you can add a tablespoon of fresh cream or cashew paste toward the end.
  • For a spicy variation, add more green chilies or red chili powder.
  • To add crunch, include capsicum or beans towards the end of cooking.
  •  To enhance the dish, add peas or paneer as additional ingredients.
