Ingredients

- Ginger-Garlic Paste – 1 tsp
- Tomatoes – 1 medium (finely chopped)
- Ready-Made Sabji Masala – 2 tbsp
- Turmeric Powder – ½ tsp
- Red Chili Powder – ½ tsp (adjust to taste)
- Coriander Powder – 1 tsp
- Salt – To taste
- Water – ¼ cup (if needed to adjust consistency)
For Garnishing:
- Fresh Coriander Leaves – 2 tbsp (chopped)
- Lemon Wedges – 2 (optional)
Instructions
For Veg Dry Dish (Jeera Aloo-style):
- Heat Oil & Temper Spices:
- Heat oil or ghee in a heavy pan on medium heat.
- Add cumin seeds and let them splutter for a few seconds.
- Add chopped onions and sauté until golden brown (5-7 minutes).
- Add ginger-garlic paste and green chilies, sauté for another 2 minutes until fragrant.
- Cook the Masala Base:
- Add chopped tomatoes, cook until they soften and the oil starts separating (5 minutes).
- Add ready-made Sabji Masala, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
- Add Potatoes:
- Add the boiled and cut potatoes to the pan, mix gently to coat the potatoes with the masala.
- Cook for 5-7 minutes on medium heat, stirring occasionally to prevent burning. You can add a little water (about ¼ cup) if needed to adjust consistency.
- Final Touches:
- Once the potatoes are cooked and slightly crispy on the edges, add chopped coriander leaves for freshness.
- Garnish with lemon wedges (optional) for a tangy finish.
