Egg Curry

Ingredients

For the Egg Curry:

  • Eggs – 6 (hard-boiled, peeled)
  • Oil (vegetable/mustard oil/ghee) – 2 tbsp
  • Onions – 2 large (finely chopped)
  • Tomatoes – 2 large (pureed or finely chopped)
  • Ginger-Garlic Paste – 1 tbsp
  • Green Chilies – 1-2 (slit, optional)
  • AV Egg Curry Masala – 2 tbsp
  • Turmeric Powder – ½ tsp
  • Red Chili Powder – ½ tsp (adjust to taste)
  • Salt – To taste
  • Water – 1.5 cups (adjust for desired consistency)
  • Fresh Coriander Leaves – 2 tbsp (chopped, for garnish)
  • Kasuri Methi (Dried Fenugreek Leaves) – 1 tsp (optional, enhances flavor)
  • Fresh Cream or Coconut Milk – 2 tbsp (optional, for a rich texture)

Instructions

For Egg Curry:

  1. Boil and Prepare Eggs:
  • Boil the eggs for 10 minutes, then transfer them to cold water.
  • Peel and lightly slit the eggs or prick them with a fork to absorb flavors.
  • Heat ½ tbsp oil in a pan, lightly fry the eggs until golden brown, and set them aside.
  1. Make the Base Masala:
  • Heat 2 tbsp oil in a pan.
  • Add chopped onions and sauté on medium heat until golden brown (takes about 7-8 minutes).
  • Add ginger-garlic paste and sauté for another 1 minute until raw smell disappears.
  • Add tomato puree and cook until the oil separates (about 5 minutes).
  1. Spice Up the Curry:
  • Add AV Egg Curry Masala, turmeric powder, and red chili powder.
  • Cook for 2 minutes, stirring occasionally, until the spices are well roasted.
  • If using Kasuri Methi, crush it between your palms and add it now.
  1. Simmer the Curry:
  • Add 1.5 cups of water and bring it to a boil.
  • Add salt as needed.
  • If using fresh cream or coconut milk, add it now for a richer texture.
  • Let the gravy simmer on low heat for 5-7 minutes.
  1. Add Eggs & Finish:
  • Add the fried eggs and simmer for 3-5 minutes, allowing them to soak in the flavors.
  • Garnish with chopped coriander leaves.

Serving Suggestions

  • Serve hot with steamed rice, jeera rice, roti, or naan.
  • Pair with a side of salad, lemon wedges, and papad for a complete meal.

Essential Tips

  • Roast the Egg Curry Masala properly to enhance its flavors.
  • Frying the eggs before adding them to the curry gives them a richer taste and prevents breaking.
  • Adjust the spice levels by adding or reducing chili powder and green chilies.
  • For a thicker gravy, add 1 tbsp cashew paste or let the curry simmer longer.
  • For a South Indian twist, use coconut oil and add a tadka of mustard seeds & curry leaves.
